Briouat

A briouat is a candy or savory puff pastry. It is phase of the Moroccan cuisine. Briouats are crammed with meat (mostly fowl or lamb) combined with cheese, lemon and pepper. They are wrapped in warqa (filo dough) in a triangular or cylinder shape. Briouats can additionally be sweet, stuffed with almond or peanut paste and fried, then dipped in heat honey flavored with orange blossom water.


The briouats are fried or baked and then sprinkled with herbs, spices and once in a while with (powdered) sugar.
